From the first page after the foreword:
"A Mineral Garden
In Kentucky is a practical, vigorously growing "Mineral Garden." Here is the original one, forerunner of many other "mineral gardens," where the vitally important but rarer minerals and metals, as well as the common ones, are supplied to the soil, balanced and proportioned to the needs of the soil, the plant, and thus, in turn, to the needs of the animals and humans consuming the vegetables. To my knowledge it is the first one maintained for the purpose of varying and balancing to a desirable proportionate standard but especially to relate the special to the general for a more definite point to work from in increasing the mineral content in kind and amount indicated of the common vegetable that daily finds its way into our bodies.
In these pages will be shown, by incontrovertible proofs, that the human body is in vital need of these rarer substances, which is a fact already accepted by foremost scientists. Although the more common elements are included in the experiments as a matter of routine, especial emphasis is paid to these rare, little-known minerals and metals that yet play, in their own small way, a vital part in human metabolism.
It will be clearly and conclusively demoistrated that these elements are noticeably lacking or insufficiently present in the plant and animal food of our nation. That this condition should be corrected, how it can be done, will, I hope, prove as absorbing and astonishing for you to read as it has been for me to work on during these past twenty years, from the first hopeful but uncertain trials, to the present accurate method of mineralization that produces spinach or squash, cabbage or carrots truly fit for consumption, vegetables that are not merely a collection of different colors and shapes for the cook in the kitchen to toy with.
In the wake of the glamour of the vitamin hunt, we must not lose sight of the necessity of the rarer minerals and metals. Vitamins are important indeed, and all credit is due to the intelligence of the American people that they have so earnestly applied themselves to attempting to secure a diet teeming with them. But the full force of the vitamin has hardly been felt, since the vitamin itself is a distinct, though complex combination of elements.
Here is no inference nor theory. Here is factual proof, by recent chemical analysis, of my growing and feeding experiments. Here are vital facts put up to the people of the world to be acted upon for the preservation and enhancement of the health and vitality of the race. In this machine age it must approach a high average well-being to meet its problems, maintain its advantages and develop along the proper direction."
